Fortis Academy students recently embarked on an unforgettable journey through the worlds of culinary mastery and historical remembrance, thanks to thoughtfully organized field trips that combined flavor, culture, and critical lessons from the past. These experiences were designed not only to enrich their education but to inspire the next generation of chefs and critical thinkers in Harris County.

A Culinary Adventure at Xochi

For aspiring chefs and food enthusiasts at Fortis Academy, a trip to Xochi, one of Houston’s premier dining destinations, offered an immersive glimpse into the art and business of gastronomy. Nestled in the heart of downtown, Xochi is renowned for its celebration of Oaxaca’s indigenous culinary heritage. The restaurant’s chefs dazzled students with a menu that ranged from mole—a rich, complex sauce with deep cultural roots—to the adventurous crunch of edible insects, a traditional delicacy in Mexican cuisine.

The visit wasn’t just about tasting delicious food. Students delved into the behind-the-scenes workings of a professional kitchen, gaining valuable insights into starting and managing a restaurant. From the importance of customer service to menu development and the nuances of achieving perfect textures and authentic flavors, the lessons were as rich as the dishes themselves. For students pursuing culinary certifications, the experience was a savory step forward in their journey to joining the food service industry.

Lessons from History at the Holocaust Museum Houston

Switching gears from gastronomy to global history, Fortis Academy students also visited the Holocaust Museum Houston, guided by their history teacher, Brian Adams. This solemn yet enlightening experience offered a deep dive into one of history’s darkest chapters: the genocide of European Jews during World War II. Through exhibits showcasing artifacts, survivor testimonies, and educational materials, students confronted the horrific realities of prejudice and hatred under the Nazi regime.

The visit illuminated how the atrocities of the Holocaust have profoundly shaped contemporary policies, leadership decisions, and crisis management worldwide.
