What began nearly a decade ago in Alief as a small fruit trailer has entered a new chapter for one of Houston’s homegrown food concepts. Gaspachos Mexican Bites has opened its first fast-casual restaurant at 2103 Lyons Avenue, Suite 310, marking a significant milestone for founder Jennifer Perez and the brand she built from the ground up.
Jennifer Perez, OwnerThe new spot represents the latest evolution of a business that has steadily expanded across Houston since its launch in May 2016. Starting with a single trailer serving Gaspacho Moreliano, Perez introduced Houstonians to a vibrant fruit dish inspired by the flavors of her hometown in Michoacán, Mexico. The signature creation features mango, pineapple, watermelon, jicama and cucumber topped with fresh orange juice, Valentina sauce, Tajín and cotija cheese.
Gaspachos Remodeled School Bus The concept quickly gained a following throughout Greater Houston, appearing at city parks, schools and community events. Over the years, Gaspachos grew from a trailer into a remodeled retired school bus, later expanding into multiple food trucks serving customers at destinations including Buffalo Bayou Park and Hermann Park. In 2023, the business established a permanent kiosk at Levy Park, where it became a popular stop for visitors, nearby residents and office workers.
Now, with the opening of its Lyons Avenue location, Gaspachos has established its first brick-and-mortar restaurant.
Designed by Architangent, the 2,514-square-foot space reflects the colorful energy of Mexican street-food culture. Drawing inspiration from both the surrounding neighborhood and the immersive creativity associated with nearby Meow Wolf, the restaurant features natural wood textures, bright colors, neon accents, Equipale chairs sourced from Tequila, Jalisco, and colorful Acapulco chairs.
At the center of the restaurant is a U-shaped walk-up corner bar inspired by the street-facing bars commonly found throughout Mexico. The space also includes four televisions and a large screen designed to host movie nights, Lotería games, sports watch parties and community gatherings. Exposed beams, concrete flooring, mixed seating arrangements and picnic tables with umbrellas contribute to an atmosphere intended to evoke the energy of a Mexican city.
The menu highlights the fresh-fruit creations that helped establish the brand’s reputation. Guests can enjoy fruit bowls topped with chamoy and Tajín, Tostilocos with meat or shrimp ceviche, and specialty items such as the Piña Loca, a hollowed pineapple filled with chopped fruit, chamoy, Tajín, lime juice and sweet-and-spicy candies.
The restaurant also offers savory street-food favorites including Michoacán-style carnitas tacos, al pastor, birria and asada tacos, along with tortas such as Cubanas and Tortas Ahogadas inspired by Guadalajara, Jalisco.
A new full-service bar program expands the menu with fruit-forward beverages including Aguas Locas, a tequila-based version of traditional Agua Fresca. Additional offerings include Micheladas, Botaneras topped with ceviche, Margaritas, Mojitos, Mangonadas, snow cones, shaved ice, fresh juices and other specialty drinks inspired by Mexican street markets.
Families will find a dedicated children’s menu featuring quesadillas, hot dogs and candy-topped snow cones, reinforcing the restaurant’s focus on welcoming guests of all ages.
The opening celebration brought together community members, family and longtime supporters to mark the next phase of the business’s growth and recognize its journey from a small trailer in Alief to a permanent restaurant destination in Houston’s historic Fifth Ward area.
The Lyons Avenue location can accommodate up to 93 guests indoors, including bar seating. Customers can place orders at the counter, through a kiosk or by scanning a QR code.
Gaspachos Mexican Bites is open seven days a week from 11 a.m. to 10 p.m., with extended hours on select evenings following special events at Meow Wolf.
