Houston barbecue is welcoming a new name to the pit as Goode Co. Barbeque adds Drew Lindsey to its team as its new Multi-Unit Pitmaster.
Lindsey brings years of Texas barbecue experience to the Houston institution, having worked alongside some of the state’s respected pitmasters, including Dayne Weaver of Dayne’s Craft BBQ, Brandon Hurtado of Hurtado Barbecue, and Mark and Mike Black of Terry Black’s BBQ.
In his new role, Lindsey will oversee standard operating procedures, research and development for new and existing menu items, and the training and development of pit crews across Goode Co. Barbeque locations. His focus will be on maintaining the quality, consistency and traditions that have helped define the Goode Co. barbecue experience.
Lindsey’s passion for barbecue started in his backyard, where he cooked alongside his father. Those early experiences shaped his belief that great barbecue goes beyond what is served on the plate. It is also about bringing people together, creating memories and serving others.
His professional barbecue career began at Terry Black’s BBQ, where he managed the pits at both the Austin and Dallas locations. From there, Lindsey continued to build his experience with respected Texas barbecue teams, including Hurtado Barbecue, Dayne’s Craft BBQ and Loro Asian Smokehouse.
Throughout his career, Lindsey has developed expertise in high-volume barbecue production, butchery, recipe development and creating standard operating procedures designed to maintain quality and consistency. At Goode Co. Barbeque, he will bring that experience to a brand with deep roots in Houston barbecue while continuing to honor the traditions of Texas barbecue.
Goode Company Chef and President Levi Goode welcomed Lindsey to the team, highlighting his passion for the craft and dedication to his work.
Lindsey will also take his skills to the competition circuit this fall as part of the Goode Company team. He is scheduled to make his competition debut September 20 at the Houston BBQ Showdown at Saint Arnold Brewing Co.
The new role marks another chapter in Goode Co. Barbeque’s long-standing commitment to Texas barbecue, pairing a Houston institution’s traditions with Lindsey’s experience and fresh perspective.
